I will probably not be blogging for a long while after next week. I am starting classes at OU on the 19th and will be quite busy with the 13 hours I will be taking. I haven't studied in 26 years!!! Please pray for me & my family. I am excited and nervous. This week I am cooking food to freeze for nights when I'm either too busy or tired to cook. (every night :o) ) Next week is clean, iron & organize. Well back to cooking.

I am freezing lasagna & meatloaf. Since there is usually only 3 of us I cut the meatloaves in half before freezing. Each calls for 1/2 lb of ground pork & veal along with 1 lb of hamburger & the veal & pork come in 1lb packages so I am making 2 full meatloaves or 4 halves. I make 2 lasagnas out of one so that is 6 meals. Also, I am making my WW chili for lunches & pumpkin muffins for Abbie for breakfast when nothing else sounds good. I am also making the WW pumpkin spice muffins. I am hoping to come up with some crockpot meals also that aren't loaded with cream soups as I am trying to lose the holiday pounds along with the rest of what I hadn't lost before they came.
